Vincent Uso, a French architect based in Melbourne, recently launched Canelé Alain, a business selling canelés online. For those who are not familiar with canelés, they are a small French pastry flavored with rum and vanilla with a soft and tender custard center and a dark, thick caramelized crust, originating from the Bordeaux region.
Canelé Alain draws upon the finest Bordeaux expertise in all things canelé, using an authentic recipe inherited from Vincent’s pâtissier uncle, member of the Confrérie du canalé de Bordeaux. It is in memory of his uncle who passed away recently, that Vincent has called his enterprise Canelé Alain.
Each canelé is cooked with passion in an artisanal copper mould, giving them their crispy crust and spongy centre…
